How Do I Choose?
Choosing Indigo Coffee assures you of freshness and the highest quality, leaving you with the search for the coffees or blends whose characteristics appeal most to you. The best advice is experiment, experiment, experiment.
In VERY broad terms:
Central and South American coffees tend to be light to medium bodied and have moderate to high acidity. They tend to be clean and crisp in the cup.
African coffees tend to be medium to full bodied and have high acidity. They often possess a winey flavor.
Indonesian and Pacific coffees tend to be full bodied and have low acidity. They commonly have an earthy flavor.
These are very broad generalizations to help you get started, but there is no substitute for experiencing the different coffees. Take notes on each coffee and your enjoyment of them much as you would in tasting wines. Evaluate their body, acidity and flavor traits. Try combining different selections based on complimentary features.
Acidity
Refers to the sharpness in taste of the coffee; it has nothing to do
with the amount of acid it contains and its effects on the stomach.
Acidity ranges from low acidity to high acidity. The more sharpness,
the higher the acidity.
Body
The richness, or perceived “weight” on the tongue. Body
ranges from light body to heavy body. The richer and fuller, the more
heavy bodied.
